The Stigmas
The Crocus Sativus, commonly known as the saffron crocus, is a spice derived from the Stigmas that are three red filament contained in the flower of this precious plant. Saffron crocus grows up to 20 – 30 cm (8 – 12 in) and every plant contain more or less four flowers each.
There are few steps before having this fantabolous spice:
The process is completely manual and this is why the cost of the saffron is so high. You have also to know that a kilo of this spice derived from over 150,000 flowers...
Saffron in Stigmas: a guarantee of quality.
We decided to sell saffron in stigmas to allow our customers to have the most of the aromatic properties of this spice with a good to see effect thanks to the presence of Crocina that gives the famous yellow-gold colour to the dishes based on saffron.
The stigmas, compared to the saffron powder, are themselves a guarantee of purity and quality, features that can be found in the preparation of first courses, meat dishes, dessert and some more.

- Collect the flower
- Extract the stigmas
- Dry the stigmas at a maximum temperature of 45°

How to cook the Stigmas
You have to use more or less 5/6 Stigmas for every person, 0,15 grams for a 4 people saffron rice. Obviously the dose You use can be change depending on the taste of each.
First of all You have to put the Stigmas in hot water for 20/30 minutes. If You want to make saffron custard You have to dilute the Stigmas in hot milk.
Then ,You have to put the Stigmas with a teaspoon in the rice. Don't forget to put the saffron at the end of the rice cooking because the spice must not be cook. You will be surprised from the amazing aromatic and coloured substances released by the Stigmas.
Don't worry if You prepared to much infusion, You can put it in the fridge and use it in a few days.
Last but not least try to put the Stigmas in hot water for a few a hours You'll be more impressed from the organoleptic properties of this wonderful spice.
